Mauritian Chicken Curry

Ingredients

· 2 tablespoons vegetable oil

· 8 curry leaves

· 1 onion

· 2 garlic cloves

· 2 cm ginger piece

· 1 cinnamon stick

· 3-4 green chillies

· 1 tablespoon thyme leaves

· 3 tablespoons curry powder

· 600 g chicken fillets

· 2 tomatoes

· 2 potatoes

· ½ red onion

· 2 tablespoons coriander leaves

For the Satini pomme d’amour

· 2 tomatoes

· 1 green chilli

· ½ onion

· 1 tablespoon olive oil

Method

Heat the oil in a saucepan over medium heat. Drop in the curry leaves, onion, garlic, ginger, cinnamon stick, chilli and thyme and cook for five minutes until the onion has softened. Mix the curry powder with a splash of water in a bowl to make a runny paste. Add the paste to the pan and give it a good stir until aromatic. Add the chicken pieces and stir to coat in the curry. Add the chopped tomatoes, potatoes and salt. Cook until the potatoes and chicken are cooked through, and then discard the cinnamon stick. To make the satini pomme d’amour, mix all the ingredients together in a bowl. Spoon the curry into bowls and scatter over the coriander leaves and red onion. Serve with rice and satini pomme d’amour.
