Harissa-Honey Sausage Skewers

· 30 chicken sausages

· 2 tablespoons clear honey

· 1 tablespoon rose harissa

· 1 tablespoon orange juice

· ½ teaspoon ground cinnamon


Soak 15 small wooden skewers in cold water for 30 minutes or you can even use metal skewers. Heat a little oil in a heavy frying pan over a medium-high heat. Add the sausages and cook, turning until browned and completely cooked through. Mix the honey, rose harissa, orange juice and ground cinnamon with a good seasoning of sea salt. Pour half of this mixture over the sausages in the pan and cook for a further minute until it turns a little sticky. Skewer the sausages, and immediately serve with the left-over glaze as a dip or any other sauce of your choice.
