Breakfast Grilled Cheese

Ingredients

· 4 slices white bread

· 250 g sausage meat

· 1 cup chicken rashers, cooked to preference

· 6 slices cheese slices

· 6 eggs, beaten

· 2 tablespoons butter

· 2 tablespoons chives

· Sriracha, as needed

· Salt & pepper, to taste

Method

Add the sausage meat to a large frying pan and brown over medium heat until completely cooked through. Remove from the pan. Melt in the butter and turn down heat to low. Pour in eggs and stir into large soft curds. Season with salt and pepper, then remove from pan. Slightly undercooked is best so it doesn't go rubbery in the grilled cheese. Wipe out pan with paper towel and turn off the heat. Place two slices of bread in the pan, spread with butter and flip over. Top in the following order: cheese, then sausage, chicken rashers, egg, chives, sriracha, cheese and then top all of it with a slice of bread and lather with butter. Turn on heat to medium and fry each side until golden brown and serve.
