Steak and Sweet Potato Fries with Baked Onion Rings

Ingredients

· 2 fillet steaks

· 400 g sweet potatoes

· 1 teaspoon ground cumin

· A pinch cayenne pepper

· 2 teaspoons vegetable oil

· Salt and pepper

· 6 onion rings

· 1 teaspoon plain flour

· 1 egg white

· 3 tablespoons breadcrumbs

· A pinch paprika

Method

For the fries, preheat the oven to 220°C. Put a baking tray in the oven to warm. In a bowl, toss the sweet potatoes with the spices, oil, and salt and pepper until evenly coated. Remove the baking tray from the oven and line with the baking paper. Add the fries in one layer. Bake for 15 minutes. Meanwhile, put the onion rings in a food bag and add the flour. Shake to coat. Put the beaten egg white in a bowl and mix the breadcrumbs and paprika in another bowl. One by one, dip the onions in the egg white and then into the breadcrumbs. Transfer to a baking tray and bake for 15-20 minutes. Return to the oven for another 10 minutes. Meanwhile, put a frying pan over high heat. Rub the oil over the steaks and season with salt and pepper. Add the steaks and cook on both sides for three minutes, for medium. Arrange the salad leaves, fries and onion rings alongside the steaks. Serve immediately.
