Summer Party Punch

Ingredients

· 1-2 star anise

· ½ cup caster sugar

· 2 cups pineapple juice

· 1 cup chilled sparkling water

· 125 g raspberries

· 120 g blueberries

· 100 g seedless green grapes, halved

· 100 g seedless red grapes, halved

· 1 mango, peeled, sliced

· 2 kiwifruits, cut into wedges

· 1 red apple, sliced crossways

· ½ cup fresh mint sprigs

· Ice cubes, to serve

· Lemon slices, to serve

Method

Place the star anise, ½ cup caster sugar and about ½ cup water in a small saucepan. Stir over medium heat for two minutes or until the sugar dissolves. Remove from heat. Place in a large bowl. Stir in the pineapple juice and sparkling water. Place all the fruit, half the mint leaves and ice in a large jug. Top with the juice mixture. Serve this refreshing punch with lemon slices and top with the remaining mint leaves.
