Chicken and Swiss Quiche

· 5 eggs

· ½ cup heavy cream

· ½ cup milk

· 1 cup BBQ chicken chunks

· 226 g shredded Swiss cheese

· 1 cup sautéed zucchini (2 cups before cooking)

· 1 teaspoon thyme

· Salt and pepper to taste

· 2 tablespoons butter


Preheat the oven to 190°C. Melt one tablespoon butter in skillet over medium heat, add the chicken chunks and sauté? them until lightly browned. Remove and set aside. Then, melt the remaining butter in a skillet and add the diced zucchini. Cook until slightly softened. Mix the eggs, cream, milk, thyme, salt and pepper in a bowl. In a lightly greased pan, layer the chicken chunks, most of the cheese and zucchini. Pour in the egg mixture and top with remaining cheese. Bake in preheated oven for 35-40 minutes, until a toothpick inserted in centre comes out clean. Enjoy!
