Chilli Salmon and Teriyaki Noodles

Ingredients
· 2 sweet potatoes
· ½ onion
· 1-2 garlic cloves
· ½ lemon
· 1½ cups quinoa
· 1 can black beans
· 1 cup vegetable broth
· 1 tablespoon yogurt
· Honey to taste
· Sunflower seeds
· ½ cup spinach
Method
Peel the sweet potatoes and cut into cubes. Dice the onion and mince garlic. Juice the lemon. Set aside. Rinse the quinoa and add to slow cooker. Drain and rinse black beans. Add black beans, sweet potato, onion, garlic, and lemon juice. Add the vegetable broth and water. Mix. Cook on high flame for four hours. Spoon into a bowl and top with spinach, a drizzle of honey, and yogurt. Enjoy!
