Turkey & Stuffing Eggs Benedict

Ingredients
· ½ kg ground sausage
· 1 onion
· 6 garlic cloves
· 4 cups chicken stock
· 1 can crushed tomatoes
· 2 tablespoons tomato paste
· 1 teaspoon salt
· 1 bunch kale
· 1 bag fresh tortellini
· 1 cup heavy cream
· Parmesan cheese
· ¼ teaspoon red pepper flakes
Method
Heat a large soup pot over medium-high heat. Add the sausage, onions and garlic to the pot and saute until the onions are soft and translucent, for about five minutes. Add the chicken stock, crushed tomatoes and tomato paste. Whisk until the tomato paste is fully incorporated. Bring to a boil, season with salt and then simmer for 15 minutes. Add the kale, tortellini and heavy cream. Simmer for five minutes until the kale is wilted and the pasta is tender. Serve with parmesan cheese and red pepper flakes if desired.
