BLT Guacamole

Ingredients:
· 2 avocados, pitted
· ½ cup lettuce
· 1 cup cherry tomatoes, halved
· ¼ cup spring onions
· Juice of 2 limes
· Salt to taste
· Freshly ground black pepper to taste
· Tortilla chips, for serving

Method:
In a large bowl, mash avocados until smooth but still slightly chunky. Stir in lettuce, tomatoes and spring onions. Squeeze lime juice over the mixture and stir then season with salt and pepper. Serve with tortilla chips.
