Apple Tarte Tatin

Ingredients:

· 1 cup sugar

· ½ cup unsalted butter

· ½ tsp salt

· 1tsp vanilla extract

· 4 large tart apples, cored, peeled and quartered

· 1 sheet refrigerated pie crust

Method:

Preheat oven to 180°C. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; refrigerate until ready. In a 12-in. cast iron or other ovenproof skillet, melt butter over medium heat. Add sugar, salt and vanilla extract; cook over medium-low heat, stirring occasionally, until sugar is dissolved and syrup turns a medium amber colour, for three to four minutes. Immediately remove from heat and arrange apple pieces over top.

Place chilled pastry over apples, tucking in edges. Bake until pastry is golden brown, for 25-30 minutes. Immediately invert onto a greased baking sheet. Cool for 10 minutes before cutting. Serve warm, with ice cream if desired.
