Banana Bread with Maple Mascarpone

· 1 cup unsalted butter
· 1¾ cups packed brown sugar
· 2 large eggs, room temperature
· 1 large egg yolk, room temperature
· 2tsp vanilla extract
· 3 cups all-purpose flour
· 1tsp salt
· 1tsp baking soda
· 1tsp baking powder
· 2 cups semisweet chocolate chips
Place butter in a small heavy saucepan. Cook over medium heat until golden brown, for five to seven minutes; cool slightly. Beat brown sugar and eggs in a large bowl until blended. Beat in browned butter slowly then add in vanilla extract. Combine the flour, salt, baking soda and baking powder; gradually add to brown sugar mixture and mix well. Stir in chocolate chips. Drop by quarter cupfuls two-in. apart onto parchment-lined baking sheets. Bake at 175°C until golden brown, for 13-15 minutes. Remove to wire racks to cool.
