Spicy Prawn and Broccolini Spelt Pasta

· 200 g spelt spaghetti
· 1 tablespoon olive oil
· 300 g peeled green prawns
· 4-5 garlic cloves, thinly sliced
· Finely grated rind of 1 lemon
· 4-5 long red chillies, thinly sliced
· 2 bunches broccolini, cut into lengths
· 1 zucchini, halved, thinly sliced
· 250 g cherry tomatoes, halved
· 1 tablespoon lemon juice
· ½ cup basil leaves
· 40 g feta, crumbled

Cook the spaghetti in a saucepan of lightly salted boiling water until al dente. Drain. Return to the pan. Meanwhile, heat one teaspoon oil in a frying pan over high heat. Add the prawns and cook, stirring occasionally, for five minutes or until golden. Transfer to a plate. Set aside. Heat one teaspoon oil in the frying pan. Add the garlic, lemon rind and red chillies and cook, stirring, for a minute or until aromatic. Add broccolini, zucchini and two tablespoons water. Cover and cook for one minute or until almost tender. Add prawns and tomatoes and cook, stirring occasionally, until the tomato halves collapse slightly. Enjoy!
