Chilli Salmon and Teriyaki Noodles

Ingredients
· 3 cups rolled oats
· 1½ cup milk
· 2 ripe bananas
· 1/3 cup brown sugar
· 2 eggs
· 1 teaspoon baking powder
· 1 teaspoon ground cinnamon
· 1 teaspoon vanilla extract
· ½ teaspoon salt
· ½ cup toasted pecans
Method
Preheat the oven to 190°C. Coat a muffin tin with cooking spray. Combine the oats, milk, bananas, brown sugar, eggs, baking powder, cinnamon, vanilla and salt in a bowl. Fold in the pecans. Divide the mixture among the muffin cups. Bake until a toothpick inserted in the centre comes out clean, for about 25 minutes. Cool in the pan for 10 minutes, and then turn out onto a wire rack. Serve warm or at room temperature.
