Lamb Larb Spaghetti

Ingredients
· 300 g spaghetti
· 2 tablespoons peanut oil
· 500 g lamb mince
· ¼ cup chilli and lemongrass paste
· 1 tablespoon soy sauce
· 1 tablespoon fish sauce
· 1 baby lettuce
· 1 Lebanese cucumber
· 1 red onion
· ½ cup roasted peanuts
· 2 red chillies
· Juice of 1 lime
· Coriander leaves, to serve

Method
Cook the pasta in a pan of boiling salted water according to packet instructions until al dente. Drain, reserving ½ cup cooking liquid. Meanwhile, heat the oil in a pan over high heat. Cook the mince, stirring, for five minutes until browned. Add the chilli paste, soy sauce and fish sauce. Cook for a further six minutes until fragrant and slightly caramelised. Stir reserved cooking liquid through mince. Remove from heat. Top the pasta with lettuce, cucumber, onion, peanuts, lamb mince and chilli. Squeeze over lime juice and scatter with coriander leaves to serve.
