Irish Stew

Ingredients:
· 500g beef
· 1½ lb. mixed vegetables (potatoes, carrots, peas, small onions, turnips, tomatoes)
· Mint
· 1in. piece of ginger
· 4 cloves
· 4 cardamoms
· 2 pieces of cinnamon
· ¼ tsp pepper
· Salt to taste
· 4oz. milk
· 1tbsp flour
· 1oz. butter

Method:
Cut the meat into small pieces and put up to stew (to boil slowly) with a little water, and with mint, ginger (whole) and spices (cardamom, cinnamon, cloves and pepper). Keep the onions whole, cut the potatoes into two and carrots round, and tomatoes into small pieces. When the meat is half cooked, add cleaned and cut vegetables (carrots, since they take longer to cook, should be added in with the meat). When the meat and vegetables are ready, add salt to taste. Mix milk with a tablespoon of fine flour. When the meat is ready, take the pan off fire, add the milk and flour mixture, and then add butter. Put the pot back onto the stove and simmer for five minutes. When serving, sprinkle a little pepper on top.
