Crisp-fried Cheese Ravioli

Ingredients:
· 2 medium-sized round eggplants
· 250g boneless beef
· Mint, salt and pepper to taste
· 1 egg
· Breadcrumbs for coating
· Oil for frying
· 1 small onion
Method:
Boil the eggplants in water with quarter teaspoon of salt in it, till they become soft. Mince the meat and add into it. Strain when boiled. Chop mint and add in the mince along with pepper and salt to taste.
Cut the eggplants into two (after boiling) and take out the seeds (be careful that the skin does not break). Mix the seeds with the meat. Cut the onion finely and fry until brown. Add into it the meat and cook till no water remains.
After the meat mixture is ready, put a little into the eggplant. Pour over it beaten egg and then coat with bread crumb. Finish up all halves of the eggplants the same way. Fry until golden-brown. Additionally, you can sprinkle some cheese and breadcrumbs on top and bake for a few minutes, as well after frying.
