KIDNEY TOAST WITH FRIED TOMATOES

Ingredients:
· 4 sheep/goat kidneys or 1 cow kidney
· 2 red tomatoes
· 1 large onion
· 1 green chilli
· 2 slices bread
· 1oz. butter
· 1½ oz. ghee
· Pepper and salt to taste

Method:
Wash and boil the kidneys. Remove the dirt from water from time to time and take off the fire when kidneys become soft. Throw away the water and slice the kidneys. Cut the onion, tomatoes and chilli into fine slices. Fry the onion in ghee, until brown. Add in tomatoes and keep frying until they mix well into each other. Then add in kidneys and chilli. Add salt and pepper to taste. Pour two tablespoons of water to prevent the onion from becoming tough. Fry for a little while then take off the heat. Toast two slices of bread (do not let them turn brown) and spread some butter on one side of each slice. Keep them in a plate, buttered side up, and put the mixture of kidneys and tomatoes on top. Serve for breakfast and enjoy.
