Spicy Chicken Kebabs with Caramalised Pineapple

Ingredients
· 1 tablespoon smoked paprika
· 4 garlic cloves
· ½ juiced lemon
· 4 tablespoons olive oil
· 12 chicken fillets
· 1 handful mint leaves
· 2 tablespoons sesame seeds
· 3-4 sliced red chillies
· Rice to serve

For the Grilled Pineapple
· 2 tablespoons brown sugar
· 1 juiced lime
· 1 pineapple

Method
Light the barbecue. Combine the paprika, garlic, lemon juice and olive oil with some salt. Mix to a paste and combine with the diced chicken, mixing well. Set aside to marinate for one hour. Combine the sugar and lime juice in a bowl. Add the pineapple slices and mix well. Barbecue the pineapple slices until lightly charred on both sides. Put the chicken meat onto the skewers and cook for 20-25 minutes, turning regularly, or until lightly charred at the edges. Top the pineapple with the mint, sesame seeds and red chillies. Serve with the chicken and rice.
