Mug Brownie

Ingredients
· 1 tablespoon coconut oil
· 2 tablespoons coconut milk
· ¼ teaspoon vanilla extract
· 1½ tablespoons flour
· 1 tablespoon sugar
· 1 tablespoon cocoa powder
· 1/8 teaspoon salt
· 2 teaspoons chocolate chips

Method
Place coconut oil in a microwave-safe coffee mug and microwave on high until melted, 15-20 seconds. Let it cool for a minute. Whisk in the coconut milk and vanilla extract. Add flour, sugar, cocoa and salt; continue whisking until completely incorporated. Stir in the chocolate chips. Microwave on high until firm to touch and no longer glossy, 30-40 seconds. Let stand for 10 minutes before serving.
