Roast Vegetable and Quinoa Salad

Ingredients
· ½ cup olive oil
· Zest and juice of 1 lemon
· 1 tablespoon parsley, chopped
· ¼ cup Cajun seasoning mix
· 8 firm white fish fillets
Method
Mix together ¼ cup olive oil, lemon juice and parsley. Set aside. Place remaining oil, lemon zest and Cajun seasoning mix in a shallow bowl. Add the fish and turn to coat. Preheat a barbecue or chargrill on medium. Cook the fish for three-four minutes on each side, or until the flesh is white and flakes easily. Serve drizzled with the parsley dressing, any sauce and your choice of sautéed vegetables.
