Grilled Greek Yogurt-Marinated Chicken

· ½ onion, cut into small cubes
· 30ml olive oil
· ½ tomato, cut in cubes
· 10g mixed veggies
· 4 eggs
· ½ tsp salt
· ¼ tsp black pepper
· Herbs to garnish
Sauté onion in olive oil on medium heat until soft. Add the tomato and mixed veggies and cook for about two minutes. Spread the mix around the base then break the eggs into the skillet and season with salt and pepper. You can even transfer the veggies to a baking dish first. Bake at 180°C for about 10-12 minutes. Remove from the oven, garnish with fresh herbs and serve.
