Mongolian Glazed Wings

Ingredients

· ½ kg chicken wings

· 2 tablespoons vegetable oil

· Ground black pepper

· ¼ cup soy sauce

· 1/4 cup honey

· 2 tablespoons rice vinegar

· 1 tablespoon sriracha

· 3 cloves garlic

· 1 tablespoon grated ginger

· Green onions

· Sesame seeds

Method

Preheat oven to 220°C. In a bowl, toss chicken wings with oil, salt and pepper. Place wings on wire rack and cook until crispy and golden for 50 minutes approximately. Meanwhile, in a saucepan, combine soy sauce, honey, rice vinegar, sriracha, garlic and ginger. Bring to a simmer until the flavours meld and the sauce reduces slightly for 10 minutes. Transfer baked wings to a bowl and toss with glaze. Return to rack and broil until caramelised for two minutes. Garnish with green onions and sesame seeds.
