Egg Masala

Ingredients:
· 4 hard-boiled eggs
· 1 1/5 tbsp oil
· 1 medium size onion
· 4 garlic
· 3x3 piece of ginger
· 2 green chillies
· 1/3 tsp black pepper
· 1/3 tsp garam masala powder
· Salt to taste
· 2 tomatoes
· 1/3 cup yogurt

Method:
Fry the hard-boiled eggs in hot oil until golden in colour. In a blender, add onion, garlic, ginger, green chillies, salt and blend to make a thick paste. In a pan, add a tablespoon of oil, add blended paste and sauté until oil floats on the surface. Add tomato paste in curry. (To make tomato paste, add two medium tomatoes in a blender with 50ml water and blend). Sauté again until the oil floats on the surface.
Now add beaten yogurt to add more flavour to the gravy. Cook for about three to four minutes and stir until oil comes to the surface. Then add salt and black pepper powder. Add fried eggs along with 100ml of water. Cover the pan for 15 minutes. After 15 minutes, sprinkle garam masala powder and cover for five minutes to make it aromatic. Egg masala is ready to serve.
