Bread Omelette Sandwich

Ingredients:
· 2 eggs
· ½ tbsp onion, chopped
· 2 green chillies, chopped
· 1tsp fresh coriander, chopped
· Salt to taste
· ¼ tsp red chilli powder
· 1tbsp butter
· 4 bread slices

Method:
In a bowl, add eggs, chopped onion, green chillies, fresh coriander, salt and red chili powder, and beat it to make it a fluffy mixture. Heat up the frying pan and add butter in the pan on low heat. Pour half of the egg mixture in heated pan and cook it for about half-a-minute on medium heat. Flip and cook from the other side. Take it out and keep it aside.
Brush butter in a pan and toast the bread slices from both sides on medium heat. Use a grill pan to get marks on the toast. Cut the omelette into pieces and layer it properly on bread slice to make a sandwich. Cover with other bread slice. Now dip the sandwich into the remaining egg mixture. Brush the pan with butter and fry the sandwich again to give it a sharp toasted colour and visible grill marks from both sides. Omelette sandwich is ready. Serve the sandwich with hot coffee or tea.
